With many different species of Sea Ducks hunted in the US and Canada the challenge starts after the feathers are removed. We have all heard the story about Cedar Plank Duck? You know the recipe where you season the Duck place the bird on the board; put the board in the fire. Remove the bird from the board, toss bird in the fire and eat the board, funny but true. Sea ducks take a little more preparation in order to be edible mostly due to their diets. They dine on shellfish, mollusks, sea grasses, and fish. This causes the meat to have a bad flavor unlike their cousins the puddle ducks that mostly eats grains, seeds and grasses.

Tip for removing "game" flavor!

Game that is strongly flavored can be improved by soaking the cleaned birds for 2-3 hours in strongly salted water with 1 tsp. baking soda. If ducks prepared this way are to be kept under refrigeration for a few days, after wiping them dry, put a few slices of onion in the body cavity. This will help remove the excess gamey taste, and the onion is to be discarded before the ducks are cooked.
